Portland Snow Day!
Happy New Year! And what a great way to get 2017 started, with a surprise snow storm in my home town of Portland Oregon.
If you’ve never been to Oregon, the stereotypes are normally dead on, in that it rains A LOT. But this year has been off the norms across the board. Summer was 90-100 degrees on a regular basis, fall was warm and dry, and now winter is throwing us all for a loop with several snow and ice storms in a row. It’s been about a month of this on and off snow/ice situation that has shut the city (and schools, sigh) down much of December and several days already in the New Year.
But the blizzard that came in last night, was an exception for sure! Snow flakes blew in fast and fat, whipping through the trees and piling up in every available crevice. A beautiful sight from my living room late into the night, and the perfect playground for my babies today!
We spent most of the day sledding, and playing with our white English Retriever Rover. If you’re ever in Portland in a snow storm, just know that the entire city will shut down and play! So in honor of that spirit I thought I’d share some of my favorite shots from today.
After our first trip outside, and a few sled runs, we came back in to warm-up and have some serious grub. One of the kids favorite breakfast foods is my homemade breakfast hash. It’s simple to make, doesn’t take too long (about 20 minutes) and is fairly healthy.
To make: I pan roasted Yukon Gold potatoes in garlic, olive oil, sliced onions, paprika, salt and pepper. Then topped it with fried egg, fresh shredded sharp cheddar cheese, sliced avocado and tomato, and topped it with a little crisp bacon and arugula. Yum!!
Then of course we needed a filling, healthy snack, for these hungry little freezing sledders. So I went with an Italy inspired finger-food plate. My favorite dry salami (from Trader Joe’s), a little Tillamook sharp cheddar, organic apples, and a fan-favorite soft brie cheese.
